The food itself
Sri Lankan food is bold in a way that's hard to ignore once you've tried it. The flavours are complex, built on curry leaves, mustard seeds, pandan, dried chillies and coconut, but the dishes themselves are accessible. This isn't food that requires explanation. You taste it and you get it immediately.
It's also genuinely varied. The north of the island (Jaffna, where our food comes from) has a completely distinct style from the south. Jaffna food is more intensely spiced, drier, more rooted in Tamil cooking traditions. It's different from what most people associate with Sri Lankan or South Asian food.
The rise of live cooking culture
Events have changed. Guests don't just want to eat anymore. They want an experience. Live cooking stations, interactive food, theatre at the table. Sri Lankan food is perfectly suited for this.
